Junket,

Never did find out if the BW got you schwilled or just ended up being mostly lactic acid. Are you doing the same process as you did with the last BW? Still trying to hone in on THE best way to make one. If the Brett C. gets released by Wyeast again, I might make mine 100% brett with a sour mash too. Love that combo. Made a 100% brett c. sour mash beer this summer and it rocked! Very drinkable for all.

Mashing a Schwartzbier right now. Using JZ's grain bill, but will pitch Cali lager yeast as my basement is in the right temperature range for fermenting that now.

Got a later start than I wanted. The back patio was a sheet of ice when I got up this morning. It will be a frost-brewed schwartzbier. :nutters:

Imperial Stout with some small additions of rauchmalt and peated malt, followed by a second runnings beer (6 gal batch of each). Not sure how the second beer will come out, but why not see what happens? Maybe I can add some dried peppers to it, I've been wanting to do a chile beer.
