You can always brew a regular 1.050 to 1.060ish 5-10 gal batch with the yeast you plan to use for the 5gal higher gravity and build a big enough pitch in the course of making a smaller beer. A lot of the high gravity beers come from smaller styles, just stay in the same family profile and build yeast from batch to batch by increasing volume a bit. Then you have a batch or two to drink and enjoy while the hi-gravity ages. Use Jamil's yeast calculator to get the numbers correct.
