I only have one CO2 bottle and I need to use it for other things (forcing my carboy contents into a keg, etc) and it'd be nice to kill two birds with one stone with the disconnects. I could have gone with polysophone disconnects, but that would have left a hose hanging out of my fridge.
The fancy pants part of this is driven by a wee amount of necessity as well. The Wife Acceptance Factor of a bright red 10# CO2 canister on the outside of the fridge in the kitchen is pretty low at the moment, so I'm trying to appease her and trying to make sure it looks nice and is squared away. I've even got a small side table that looks like a chest that I'm going to put it in so she doesn't have to look at it. (She can even put some sort of frilly thing on top of it if she wants). It sounds like none of this should matter, but for those of you that are married you know what I'm talking about.
Big thanks again to KBar for coming through with the parts and understanding my motivation.
