Doesn't nitrogen pressurization mask a degree of the beer's flavor? I thought I heard that before; almost like how serving too cold does the same...

Don't see how it would as it doesn't dissolve to any real extent and does not have an effect on the sensors in the tongue the way CO2 does (dissolves to form carbonic acid and the sensors react to the low pH - it is, apparently, not the physical action of CO2 bubbles as previously thought). For a given gauge reading the partial pressure of CO2 is lower in a mix, the beer is less carbonated and therefore less spritzy tasting so I suppose you could consider that a "masking" mechanism. Of course when it comes to the way the human body responds to stimuli Occam's razor doesn't always apply!

Thanks for tips. It may not be to style, but it sure is good.

It has a nice creamy blond head. Good head retention last the entire time. The first drink is smooth and creamy with great flavor. As it losses carbonation the bitterness gets stronger. After a few of these you might just have a chance at drunk of the week.
