I don't have the setup yet, but from what I recall, nitrogen is not very soluable in water. By storing and serving it at 30-35 psi, you are essentially allowing your restricter plate to work properly, while not over carbing the beer when using beer gas (ie, CO2 pressure is only around 10 psi of the 35).

So you could just hook it up to the beer gas and force carbonate it like usual. However, since (I assume) beer gas is more expensive - you might as well just use CO2 at 10 psi to carbonate - then switch to beer gas at the elevated pressure to serve.

I could be wrong, but that is how I understood it.

First off I'm pretty sure that nitrogen won't dissolve in the beer and that's why it's used. Example, they use nitrogen to push wine when it's on tap and there is no difference. The reason there is a "creamy" head is the high pressure pushing the beer through the restrictor plate in the faucet.

I think you only need one mixed tank and one co2 tank. I'd just carb to the desired level with co2 then switch over to the mixed gas.

Now this part I'm just thinking out loud. If you keep the beer the same temp and carb to a certain level with pure co2, look it up on a chart, then when you switch to the mixed gas the pressure should be matched to the co2% of the mix. Example: Carb at 8 psi with co2, then set 60/40 mix gas to 20 psi would give the same carb level at the same temperature. Like I said I'm just thinking out loud and don't know if this is right. Can someone who knows a little more than me chime in because this makes sense in my crazy mind and I'm going to set up my stout faucet in a couple months.

Ok, This is my take. I have a 4 tap set-up with one tap on Nitro. You need a Nitro tank. This tank is called "Beer Gas" it is a premixed Nitro/Co2 mixture for bars etc... You will need a special regulator for this. I carb with CO2 for about one day at 30 psi or so and move the in tube and connect the Beer Gas mixture. I have the gas at 35 psi. Higher is better. A lower psi will cause more foam. Do to the restricter plate. The LHBS guy is full of it. You do not need or never will need 3 tanks.
