Skipping secondary - keg conditioning

Wed Oct 08, 2008 3:26 pm

Hey BN Army-
So I brewed an AG batch of ESB last weekend and feel the stars aligned. 80% efficency, hit all the numbers right and the wort came out like gold. The yeast has had my fermenter bubbling for 3 days staright and its starting to die down now. It's in a bucket now and I'm thinking of putting it in a keg this weekend and let it age a couple of weeks if its in the ball park of the desired final gravity. I usually throw it in a secondary but I'm thinking screw it. It'll just add a step which could mess it up. Any thoughts?

I would wait at least a week before puttin it in a keg. LEtting it go all the way is best, but i know of a few people that close off the fermenters before its all done, that way any of the co2 produced will go into the beer and require less to pump into it to get it up to carb. kgive it at least a week or ten days if you want my opinion. I would cut off the beer out dip tube so you dont get a bunch of pints of yeast when tapped.
