cguntzviller,

I haven't used hopped extract before, but based on your comments, I would make a small batch of non-hopped liquid extract and hop that before adding your hopped extract. Maybe 2.5 gallons of non-hopped LME with about 75% of normal batch (5 gallons worth).

I also agree with everyone else about the yeast.

I currently got 2 hopped kits going that I added a little extra hops to, did it 30 and 10 minutes prior to end of boil, then I threw the taped yeast packs in the trash where they belong and added some name brand stuff....major bubbleage!!

Eight up? Once in a great while I run into somebody still sporting that on their right sleeve.

And absolutely grab some better yeast ... even if its dry.

Agreed. I just made a Nut Brown ale this past weekend. Mini mash and 6lbs of DME with some English Ale yeast. It's a bubblin away in the primary.

I never just brew the kit ingredients. Most of the time, it doesn't fall into style guidelines when you do. I usually adjust the recipe to keep it close to BJCP guides.
