I really love this microprocessor, it has 8 seperate processors that each run at 80Mhz, 32 input/outputs so I can control and monitor just about anything
for the temperature probes I am using ds1822 digital 1-wire sensors. With a microprocessor I can add as many sensors as I want all to just 1 common wire and address them individually by a 64 bit address. I have 3 solid state relays to control the asco valves for the gas. The screen is a 2.5" lcd. The Ph sensor I need to change, I am looking at this one right now. I might put this off for a while, it was just doing it because I had a sensor laying around and thought it would be a cool geek factor.

OK, apparently this solution isn't for the faint of heart - and I think I just had a massive coronary looking at the PDF. I'll just keep my little electric timer and stick thermometer for now. Man, do I feel stupid.
