Gluten fining

Fri Aug 02, 2013 11:32 am

I've been hearing rumors of a fining agent that targets a protein in gluten and takes out most of the gluten. I can't seem to find much info online.

Has any one heard of this or know of any commercially available products? I'd really like to get my hands on this fining agent.

Thanks

Clarityferm.

Beyond the name, I don't know anything about it.

Edit:

spiderwrangler wrote:Yeah, I'm out of town at a conference, so haven't been on in a bit. The recipes I have are extract based, but built to reduce the impact of sorghum extract as much as possible. As Bok said, ClarityFerm is a product that has been used with success to brew beers with standard grain bills and enzymatically digest the glutens during fermentation. If you want to all grain, that is likely the easiest way. The best price I could find (and nice customer service) was with AIH folks, who are also a BN sponsor. If you don't want to go this route (looking for more challenge, super sensitive and don't want to risk it, etc.), you could try using gluten free grains.
The issue with brewing with your own gf grains is that you will have to get viable grain, malt and kiln it yourself. The GF grains readily available from food stores don't contain any enzymes, and the readily available amylase enzyme doesn't function at mashing temps in my experience.

Also called 'Brewers Clarex'. I'll be brewing a batch using it tonight.

Can you let me know if you have good luck with it; my lady cant do gluten and it sucks not being able to share some of my beers with her. I am hoping this will be a good solution.

Yeah, should be bottling it soon, Once it's carbed ill let you know. At least it has a built in negative test.... If there is still chill haze, it didn't work and I shouldn't feed it to her.

I just heard an episode on BBR talking about this. A guy wrote in a few episodes later & he said his wife was suffering no ill effects. He didn't mention how sensitive she was to it though & everyone's a little different. No matter what it'll be a risk, but if your lady wants to try it I wouldn't see why not. Be prepared just in case.

I've mentioned elsewhere that my wife isn't strictly Celiac. She doesn't get the systemic, long lasting effects if she is exposed, hers is more... er.. digestive in nature. For someone who is more sensitive, the consequences can be more dire.

Your consequences are going to be dire if she founds out you were talking about her 'digestive issues'.
