First time doing one of these, and looking for anyone with experience making one.
I'm unsure if I should use 5 gallons of cider and mix my DME and steeping grains into it, or make 2-3 gallons of wort with DME/grain and water and splice it with cider. I'm shooting for an end product that is more cider than beer, but has some body, head retention, and enough of a malt profile to not eat my stomach like normal ciders do. Here is what I'm thinking....keep in mind that this is a rough draft.
5.5 gallons
15 IBUs from 60 minute addition.
3.5 gallons Cider
2 gallons wort from 3 lbs DME in 2 gallons H2O.
1/2 lb Crystal 20 steeped in Wort.
WL English Cider Yeast.
Like I said, pretty rough, but didnt know if I should mix wort with juice, or just mix DME into 5.5 gallons Cider.
