WLP007 problems

I had two WLP007 vials shipped to me from the US to Brazil and the yeast keeps throwing a strong banana aroma and flavor. I´ve made a starter and I´ve tried it for 3 generations with this banana ester. All fermentation were temp controlled under 18C.
Is this yeast done or there are something I could try to bring it back?

Under-oxygenation will throw off a lot of banana esters I've found, even with a starter and temp control. I had this exact problem (albeit with 550). Are you shaking the shit out of your carboy?

If that doesn't work, then something happened and the yeast self-selected the cells that throw the esters and killed off the ones that don't. Personally, I'd go with pure 02 for 90 seconds, using a new vial stepped up in a starter. WLP007 is one of my favorite yeasts and never had any issues like you are describing. Don't give up on the strain, it's a great one.

007 has very temp dependent esters. I find 68-72 i get more strawberry, i get more pinapple, apple pear at lower temps. If you're higher than that that might also explain banana.

Esters are always a product of growth and temperature. Lower pitching rate, less oxygen, and higher temp favor more esters. Higher pitching rate, more oxygen, and lower temp favor less esters.

Tks for all the answers and I will try to use oxigen, which I´ve never done so far and test it again, if it doest work, I will try a new vial of 007.
