JZ Dusseldorf Alt water profile

Sat Apr 09, 2011 12:55 pm

Was wondering if anyone has had experience with a good water profile for this beer, the only thing I came across on the internet was this profile and I don't even know if it's correct.

Completely Unofficial Dusseldorf Water Profile
Ca++ ppm 40
HCO3-- ppm 85
Mg++ ppm 24
Residual Alkalinity (as CaCO3) 27
Alkalinity (as CaCO3) 69.7
Total Hardness (as CaCO3) 200

I know you want to keep the sulfates down to increase the malt profile in the beer to balance out the hop's. Any help would be greatly appreciated, thanks guy's.

While that water profile is accurate for Dusseldorf today, it does not represent what the City used to have. The water company switched to another water source in another valley some years ago. It is difficult to ascertain what that profile was. Bru'n Water includes an estimated water profile, but I haven't figured out if its truely representative. It is balanced though.

Dusseldorf Alt is a malt focused style with an ascertive bitterness. The profile in Bru'n Water shows a decent sulfate content.

Im sure that the profile in brunwater would be very appropriate.

Martin..I tried your spread sheet out last brewday and it worked great. Other spread sheets where telling me I needed quite a bit more acidification and I was happy I went with brunwater. Nice job.

[urlhttps://sites.google.com/site/brunwater/][/url] this is the link to mabrungard's water spread sheet. He also has a ton of profiles listed in it. Its not the simplest but it is the most accurate ive used.

you could also use EZ Water http://www.ezwatercalculator.com/ or john palmers spread sheet from his website.
