10 gallons of Celebration Ale CYBI. Expect I have the English Crystal. Bringing it up to boil right now.

I used muntons crystal 49-60 and it turned out pretty dark. Darker than expected. Oh well should be tasty.

Well todays brew was on again off again on again. My smack pack wasn't doing as well as expected due to age so yesterday I decided to cancel todays brew. Last night I had an idea to split the batch and use 2 yeasts. So I'm going to pitch my smack pack this morning into a 1 L starter first. I'll brew 12 gallons of Bitter today and split it 3 ways. In the first 5 gallons I'll pitch the 1 L starter of W1275 and in the remainder I'll pitch 2 packs of S-04 dry yeast. I'll be bottling the portion with dry yeast and kegging the 1275 version. The important thing here is that I will be brewing today!
Well that keg disappeared fast!

Got little test batch going to see how a blend of commercial dregs does as a primary fermenter.

About to start an amber ale to use up some of the willamette and cascade I've got in the freezer.

Oud Bruin in the fermenter. Destined for a pinot noir barrel for a year with some bugs, and then some tart cherries for a while. 10 of us brewing 60 gallons.

Not brewing. Just kegged Dirktastic, my Tasty APA with Citra. Gotta get it carbed by next week so I can send it to NHC.
