Belgian Candi Syrup?

Sat Nov 27, 2010 4:53 am

What is up with all the big suppliers not having ANY belgian candi syrup for sale (morebeer, NB, midwest, etc)? Anyone got the inside scoop to this?

I did not know that. I hope this isn't a 'shortage' issue where it comes back but at double the price!

Didn't see any. Had to order some from Williams Brewing but that is on the other coast for me. Still curious as to why it is not more available.

i make my own and save the money, search how to make invert sugar or even belgian candi syrup

basically dissolve 1lb sugar in 1/2 to 1 cup of water, add some acid (i use citric or just lemon juice). bring to a boil, hold the temp around 150F by adding water, if you go hotter when it cools you will get the hard sugar, over time the syrup will darken...stop when you are at the srm you are looking for....you can find more detailed instructions online. this is what i used the first time

I'd like to know the reason for this as well. I would like to order a few pounds for a Quad.

Somebody from another forum emailed dark candi and here was their response:

Thank you for your interest....We are still in business!
We are very sorry to be absent from the market as of late. The truth is that our syrup is very expensive to make, import and put into pouches. To add to this, the commercial minimums required make it a large financial investment.
We are committed to the homebrew market and we will be back in shops very soon. Our syrup pouching is underway and will be finished in the next few weeks.
We appreciate your support and we apologize for the inconvenience.

With my best regards,

Brian

I had to brew an Abbey Ale with hard candi sugar. I was not happy.
