Bottling Belgian Dark Strong

I brewed the belgian dark strong and did not hit my Preboil or OG.
I still fermented the beer and have now reached the FG. The target ADF is 75%

The details are
OG 1.078
FG 1.023
ADF 69.3%

Is there any reason not to bottle this beer now? It has stopped fermenting.

have you been rousing for a few days? AG, partial mash, or extract? I'd hate for you to end up with bottle bombs.

You could always add some invert sugar to the secondary. This will drop the gravity into the teens and help dry the beer out too.

Why invert sugar? Wouldn't regular cane sugar be sufficient? Just curious.

The reciepe is from BCS and was an all grain batch.
I hit all my mash temps but not my efficiency.
The beer was brewed on 11SEP and pitched that day.
The next day there was foam coming out of the airlock.
About 5 days later I added half of the candi sugar and then another 5 days
and i added the last of the candi sugar.
The FG is 1.023 and in BCS it is 1.024.

I'd rouse for a few days just to be safe. my extract BDS started at 1.084 & ended at 1.010 (BS estimated a FG of 1.017). better safe than sorry IMO.

If you mashed similar to JZ's recipe, then I would bet you have reached your terminal gravity. Give it one more week, then take another reading. If you are stable then package that sucka up!
