Numbers says fermentation is finished but...

Hi, last sunday i brewed a Scotish Ale using the recepie from Brewing Classic Styles. Mi initial gravity was 1.050, i just measured the gravity and it shows 1.012. Apparently is finished, but it looks like this: Image.

I used Safale US-05, its the first time i use it and controlled the fermentation @68F. The beer tasted good, so its not contaminated. Should i wait for more sedimentation? Reccomendations?

It's only been a week. The yeast are still busy doing other shit besides making alcohol that are good for your beer. I would wait another week before racking the beer off the goo.

I have had krausens last up to 3 wks using US-05 that look like that. Listen to Bug and let that beer sit for a total of 2 wks so the yeast can help clean up and condition the beer before packaging. I use to fret that the krausen hadn't dropped before packaging time, but then realized that the yeast were probably protecting my beer from oxidation/infection.

I haven't had i krausen lasted so long before, shall i keep it at 68 or crank it up a little bit, like 72 or 74?

If you are able to crank up a couple degrees for another week it won't hurt it, it may actually make it better. If you rack into a secondary, let it sit another 2 weeks or so to let everything drop out. There is nothing worse than bottling beer and having a quarter inch of sludge in the bottom of the bottles because you just weren't patient.

Let it ride out the remainder of fermentation (2wks) at 68. You can raise the temps a tad to be sure the beer is done fermenting, but at 1012 FG I would say that your gravity is stable. If you have the ability to crash cool it for a couple days before packaging your yeast should drop out a bit giving you a cleaner product.

Doesn't look finished to me either. There has got to be CO2 coming up to support that cap. At 1012 you have an ADF of 75%. You may be headed for and ADF of 80% or even a bit more. What does the yeast supplier say about this strain?

Not much Its a Fermentis Safale US-05. Sedimentation: low to medium and Final Gravity: Medium.

I will wait a week, i guess the beer will improve. I wanted to make another beer, mmhh, i just have to be patient.
