I did not think that Fantome used pedio in their beers, but I could be wrong. Interesting that you got such a noticeable butter thing from building up the dregs. How much did you build them up? Was it just a small starter to get them going or several steps? I was planning on pitching my Fantome dregs right when I pitched my ale yeast once the beer cooled low enough and the lacto had a good 1-2 day start on the wort. I will be doing this one by the end of the month hopefully. A lot of research and communication has gone into this brew, now its time to take some action! :bnarmy:

My berliner is at about a month in the carboy and has just a very light tartness too it. With the longer aging after pitching dregs, do you rack off the yeast to prevent autalysis? Should I wait another month before pitching anything to see if the lacto kicks in? I only gave the lacto a 30hr headstart before pitching wyeast euro ale yeast, and now I'm regretting not waiting longer.

I would rack it and add dregs from something like Lindeman's Cuvee Rene.

Where is your gravity now?

A friend of mine got his WL vial the same time as me, made a starter on Friday night that hit high krausen in 36 hours and pitched it. He's doing the same method as I am by spitting the ale yeast and bacteria in different carboys. Today he offered me a liter or so of his fermenting wort to add to my carboy. The other option I have is getting a new vial and making a starter similar to him. Which one do you think would work best?

Might as well get some of his fermenting beer, cheaper that way. That should work just fine.

Fuck it, I would do both. Seems like one can't get enough lacto in these beers. I know people have even added a fresh pack of lacto at bottling time as well.

Gravity is about 1.006. So Cuvee Rene has pretty good dregs? I guess maybe I just don't trust them because of the pasteurized, sweetened stuff that they put out.
