Thanks guys. I will definitely use both methods and take advantage of the steady ambient temp to get some of those fruity esters. I wasn't planning too many high alcohol beers at this point. If I was going to make a higher alcohol beer, would I lose too much space in my 1 gallon jug to be worth my while? Is there much of a difference in the amount of trub produced from lower to higher alcohol beers?

I have made beers in 1 gallon jugs before and I borrowed the mop bucket to put the jug in with water around it to cool ferment temps.

Just wanted to let you all know that I got a trash can that works perfectly and according to the fermometer of the Rye that I just brewed the temp is steady at 64 degrees. Woohoo. Thanks so much for all the help. And thanks Aquarium for the thoughts on the beer I brought into the meeting the other day. Will definitely make sure my priming is done correctly next time!
