you can always pitch a huge amount of brett/pedio/lacto knowing the good bugs will dominate, I guess that depends on the style you brewed though

I'm more relaxed about it now. I fucked up. I have a 6 inch pipe screwed into my ball valve and I've always put blocks under my carboy so that the pipe was inside the neck. I didn't do it this time. I try to learn from my mistakes, and I won't make this one again. Hopefully it turns out ok so I can take on vacation.

I remember reading somewhere that fruit flies can carry acetobacter. It’s not really desirable in any beer but there are always exceptions. Not knowing what kind of fly or where it was beforehand. I wouldn’t hold my breath hoping for something great.
