I'm going to start entering competitions this fall with an Oktoberfest, and later in the year a Winter/Christmas style and Spiced Beer categories. I've been tweaking this recipe and will hopefully get this started in August so it would be ready for any Oct-Jan competitions. Just looking for recipe suggestions.
I was going for something bready and malty, cinnamon toast style. Orange and citrus in the back drop and nose...pommander ball. Mild alcohol warmth, good drinkability.
Protein rest at 120 F for at least 20 mins, and then 154 F mash for 60 mins. Fermentation at around 65 F. I don't filter so I was going to lager this at around 38 F or so for a few weeks after.
