Added the first 120z of sugar this morning, man that yeast was angry, it started foaming up everywhere. Had to grab the Ferm cap real fast!

Thats a piece of PVC with a big mesh bag clamped on it so we can add the pellet hops in and not have to use 40 bags. It basically sits on the kettle and hangs down to the bottom. The Warrior was in pellet form and the Amarillo and Simcoe were all whole leaf. The pellets dont play very well with the hop stopper, we usually re circ and the end of the boil and they compact on the hop stopper. The whole leaf does fine so we let them go in loose.

Pitched the WLP099 yeast a day or so ago and the airlock is knocking pretty quick again. I will be glad to finish up with these sugar additions! Another 6 or 7 days of sugar in the am and the pm, then another 2 weeks of dry hops everyday. I tasted some last night, pretty bitter and sweet.

Hopefully I'll be able to swing a swig from this once all is said and done. Planning on aging any of it? The one and only time I had a 120 it was sickingly sweet and had lost all hop presence. Wasn't really a fan, but I hear it's a different beast when fresh(er).

SO i took the 120 Minute to secondary today. Yeah it fermented down a little bit more than expected. Got down to 1.032. It tastes great though, not exactly a 120 clone, more like a 120 cousin to the real thing. I think this version will be better than the real deal
