I use Reverse Osmosis water when I top off. It's about as sterile as you can get.

No... technically, distilled water would be "most sterile" ( :P ) - if it was packaged and handled properly.

Take out your meat thermometer and plop it in the water, if it's cool, use it.

If you boil the water it could remove some of the things that give beer it's flavor!

I've used a uv steralizer after my RO/DI system but that is a little overkill. I usually boil mine now if I don't have the UV handy.

This top-off water you speak of - is it to lower your gravity if you end up too high? This sounds different than the large amount of water you add when to do a partial boil. Or is it the same thing? The first brew I did the OG came in at 1.066 and the recipe called for 1.061, but I just left it alone. This was also measured from the first runnings after the boil, but I would imagine it would be more consistant and not drop off in gravity as it would when you sparge and introduce more water to the mash mixture in all grain brewing.

I use the RO water from the grocery store. It's 33 cents a gallon in my jug and I've been using it -straight- to top off since I started brewing, about 17 batches. I've had no trouble, and no reason to anticipate any. As I understand the process from the front of the machine, it takes the city water and runs it through a charcoal filter to remove the chlorine, etc, then the reverse osmosis filter, then UV to make sure there are no surviving microorganisms, then a final filter. That's pretty thorough, and if I'm taking a chance, it's going to continue that way.

Me too I've been using bottled purified water for top off without any issue so far doing the same thing you do...
