diastatic power?

would there be any diastatic power in pale 2 row malt if it were toasted dry @ 350 for 10 minutes? Or is this long enough to convert? Or is the purpose toastiness only and no sugar conversion?

350F would likely destroy any enzymes in short order, and there would be no conversion.

so would a mini mash convert the starches if more 2 row was used in about a 50/50 ratio? About 8 ounces of each.

That would work, but I think what you're trying to accomplish could be done by just using Briess Special Roast with some 2-row... unless your true intent is to toast your own grains just to see how it comes out? A worthy experiment in my book... I usually toast my own oatmeal.
