I am working on a mini mash recipe with a high degree of flaked maize and some flaked barley and I need to be sure that I have enough DP in the base malts to convert. Does anybody have a chart that would tell me how much of a particular base malt I would need to convert a certain amount of an adjunct?
6-Row = 160 Rahr Pale = 140 Maris Otter = 120 Briess Pale Ale = 85 Most Pilsners = 70
According to http://en.wikipedia.org/wiki/Diastatic_power, anything 35 and above can self convert, so I guess anything 70+ can be mixed 50/50 for the grain bill with a non-enzymatic malt, and I guess anything 140+ could go 2:1 adjunct to base.
