I wouldn't worry too much about the lag time. At what temp did you pitch? I've stated pitching a little lower (1-2 degrees) than my planned fermentation temp (as suggested by many fellow brewers), so I’m sure that that slows things up a bit. I’m confident, however, in knowing that I pitch what JZ’s calculator told me to, so I don’t think about it too much. My experience with that strain tells me to advise you to put some towels on the floor, because that thing is going to erupt. I've never made a Hefe that didn't gush.
As for your gravity, it can't hurt to add a little water to your pre-boil to make sure you hit your estimated gravity. This helps to ensure that you have the prober BU:OG ratio that the recipe suggests.

I pitched at 70° and am planning to ferment at 62°. However, I have 2 new toys that I'm not comfortable with yet. The aeration system from NB came but was missing the diffusion stone. Course I didn't know that til I was sanitizing it mid-boil. So, I aerated with naked tubing--hoping that works.
I am also using the digital JC for the first time. I taped and insulated it to the keg but my issue is the the settings. I set it to a 2° dif and a 12 minute ASC. Problem is, it's been hanging out at 60° all night instead of 62°.
I brought the set point to 70° and changed the ASC to 7 minutes. The thermal mass of this and the mid 70's temps we've had PLUS that it's in the freezer...should take all day to reach 65°.
