I can't stand peat smoked anything, so my votes for the second one. BTW, have you factored in yield loss to trub and grain absorption? From your recipe I can't tell, but if you're looking for a final volume a wort batch size of 5 gallons won't yield 5 gallons of drinkable beer.

+1..... do the second and when you get around to the first - nix the peated malt. Unless of course, you are making a wash for Scotch.

Yeah, Peated Malt is definitely rougher than Rauchmalt, so make sure you like it before you use it (if you like Islay Scotches, that's what they're made from). Otherwise, the Rauchmalt gives a smoother smokiness, but you'll have to use more of it because the phenol level is lower than Peated... like .5-1lb of Rauch would equal .25 of Peated. Sometimes I'll use both... but those beers are definitely smokier than most of my friends prefer.

I've never used either but maybe go sparingly? Then see if you want to step it up. At least then, you'll probably like the beer and know what to do with it later. If you put too much, you may not like it and it's a waste.

Peat smoked malt is horrible. I used it in a couple of batches, and even in tiny quantities, like 1-2 ounces in 5 gallons, I still can't recommend it to anyone. Some people claim to like it. Not me. My advice, don't do any recipe containing peat smoked malt. If you do.... you've been warned.
