If there is indeed an increase in surface area and not just an increase in head space, then yes the evaporation rate will increase. I think there are complicated formulas out there to figure it but it will take less time and brain strain just to boil some water and figure it out there.
One thing to keep in mind is to figure your rate as a volume per hour rather than percent per hour. If you get a 20% boil off rate on 5 gallons, you will lose 1 gallon in that hour. If you boil 10 gallons in that same pot with the flame at the same intensity you will still lose only 1 gallon, not the 2 gallons that a 20% rate would indicate. Using the gallons per hour rate, you will have predictable evaporation loss regardless of the volume (again assuming same pot and same boil intensity).
