I don’t have a big kettle to try that with right now. Here in the next month or so I am going to order a 15 gallon kettle and propane burner. I have tried the late extract method and have had good results. I was working on a recipe that called for 6 gallons of wort and 5.5 racked to the fermenter and didn’t really know how to convert the recipe. I ferment in a 6 gallon Carboy and really only have room to put 5 gallons in the fermenter. Would you just figure out how much grain/extract per gallon of work the recipe calls for and scale it down to 5 gallons of wort? Then I would just boil the 3 gallons of wort using the late extract method and top off with 2 gallons of water?

I brew on the stove by splitting my wort into 2 pots (4 gal and 2 gal) and using two burners. You need to be attentive though because in order to do a full volume boil (5.5-6gallons), both pots will be nearly full leaving no room for boil-over. Additionally, make sure you evenly distribute the runnings between the two pots, or your hop utilization will get screwy.

I do a full wort boil on my electric range with an 8 Gallon kettle. Before I got that I had good results with a late extract addition to an extract batch. I think that even when I did all extract batches that moving up to a full wort boil was great.

On the electric range, over two burners, it takes a while to get to a boil but it does a fair job once it gets there.

Thanks for all the info! I just ordered the Morebeer 15 gallon kettle as it was reduced by 30% for a black friday sale so I will be able to use that on my gas range split over 2 burners.

you could always just do 2 half batch boils and combine (if you have 2 pots you can do them at the same time...
