A year ago when I watched my first homebrew being made steeping (and crushing those specialty grains with a rolling pin in a big ziplock) was part of the process before the extract and hops were added. Did not make it seem overly complicated to me and was a bit more interesting than throwing only extract in for the boil.

What I did not learn until later was proper yeast pitching rates and the fermentation temperature should be held constant at a certain temp - if you can teach them that right at the beginning you will help them make good beer right off the bat.

I think I'll stick with steeping grains and advocate sanitization and fermentation. Can't go wrong with that

my first batch was extract with steeped grains. Easiest thing i ever did. It actually came out really good and all 5gal was gone in a week with the help of a friend. Now im all grain with toys to boot :D

My LHBS starts everyone with extract and steeping grains and it wasn't a problem for me either. Even though I plan to go all grain at some point in the future I still brew extract with steeping grain to help save time. I'm in the camp that believes you CAN brew good beer this way and I'm quite proud of the 39 pointer that I entered into the state homebrew comp a few months ago :P
