I pitched at 70° and am planning to ferment at 62°. However, I have 2 new toys that I'm not comfortable with yet. The aeration system from NB came but was missing the diffusion stone. Course I didn't know that til I was sanitizing it mid-boil. So, I aerated with naked tubing--hoping that works.

I am also using the digital JC for the first time. I taped and insulated it to the keg but my issue is the the settings. I set it to a 2° dif and a 12 minute ASC. Problem is, it's been hanging out at 60° all night instead of 62°.

I brought the set point to 70° and changed the ASC to 7 minutes. The thermal mass of this and the mid 70's temps we've had PLUS that it's in the freezer...should take all day to reach 65°.

18 Hours....nothing. Not a bubble one.

The carboy is finally at 63° though.

I hope so. I'm nervous as shit right now. I'm PRAYING for a mess to clean up. I've been going through my process over and over and over.....trying to think of something.

I'm at work right now but can't wait to get home at 9:30 tonight so I can check on it and get more stressed about it.

BUT, I'm going to BJ's Brewhouse tonight after work too. So at least I have that to look forward to.

I did not make a starter as I had a very short window to brew and I just finished my stir plate on Wednesday. HOWEVER...using the Mr. Malty calculator, I pitched 2 vials of WLP300.

I've never made a starter before (just now getting into that) and while I haven't had great attenuation, I've never had this kind of lag before.

O2? Yeah. I bought the aeration system from Northern Brewer. It's the aquarium pump with a HEPA filter. They did not include the Diffusion stone inthe package so I aerated for 30 minutes with "naked" tubing.

OK. Right. I remember reading that. Sorry, I’m about six beers into the night, and three beers into a six pack of Bell’s Hop Slam…

About a year ago I started adding O2, made appropriate starters based on JZ’z calculator, and pitching cooler than fermentation temperature. Every beer since then has had a long lag time (longer than I was used to, anyway), but once the beer started to ferment, it rock ‘n’ rolls. Because I knew my process was good, and I pitched what JZ recommended, I knew that everything would be O.K.

My guess is that (especially since you’ve started adding aeration) you’re growing more yeast, which takes time. If you’ve been shaking your carboy up to this time, there hasn’t been a lot of O2 in solution; when the O2 is gone, it starts to ferment the sugars. I would have to assume that since there is more O2 in this beer, your yeast has a chance to grow longer than you’re used to. Actual fermentation will not start until the O2 supplies have been depleted. I know you’re at work, but have a pint as soon as possible. You’ll be fine... you know the line...relax...have confidence in your methods...don't worry...

Groovy man. Thanks for the thought out responses. I totally did not take your sentence above into consideration in my worries. I JUST heard this on a podcast too. I completely forgot about the building cells part.
