Thanks guys. I will definitely use both methods and take advantage of the steady ambient temp to get some of those fruity esters. I wasn't planning too many high alcohol beers at this point. If I was going to make a higher alcohol beer, would I lose too much space in my 1 gallon jug to be worth my while? Is there much of a difference in the amount of trub produced from lower to higher alcohol beers?
