This statement doesn't make any sense to me. 3 volumes of CO2 is 3 volumes, regardless of the pressure you are applying. Once you get 3 volumes in solution, the head pressure of 40 vs 50 psi is only wasting CO2 in the headspace (which, in a full 5g corny is very small). The higher pressure is just forcing gas into solution faster due to a greater differential between the liquid and the headspace.

If you are worried that a 9psi difference will blow a post off, I wouldn't worry too much. A corny keg is rated to 130 psi (at least the one I looked at was). 41, 50, you are still way lower than 130.

I was afraid that my tubing would blow off of my post, and not the post out of the corny. I was using silicon tubing, so I could see a big bump around the clamp. I had a terrible experience in the past that my beer tubing was blown out of the post, and sprayed beer all over my house... So I worried that 50 PSI would blow my tubing out of the post, even with clamps and all

Again, I was afraid of tubing getting blown off of the post, and not the post of the corny. Maybe I should have used vinyl tubing....but then, I can´t find vinyl tubing with good flexibility around here...

Ok, so I figured I would give my first half botting a try. I was very anxious to hear the sound it would make when I opened it. So I popped the opener and......'pop' good sound. Carbonation was ok. Not very many small bubbles, but a good white head to back that up. I figured it´s going to be ok for tomorrow. Going to wait tomorrow morning and try some 2 more bottles again to be sure, then going to label it and off we go...

For the 2nd corny, since I had acceptable results from the first, I didn´t mess with it. I am bottling just as I proceded with the first one. 3 growlers, a bunch of flip-top bottles, some crown cap bottles, and that´s it..

Ok, so I am labeling right now. I opened up a warm bottle, and it had a good carbonation. It worked I think.

How cold were your kegs? I think you can get them down to about 30oF without freezing. You would get more dissolved CO2 into colder beer and, after losing some from bottling, you might be closer to your target volume.
My vinyl tubing gets really stiff but if I need to, I dip it in hot water to soften it up (trying to get ends off of barbed fittings without cutting). Haven't tried silicone but that bulging would make me nervous. Is there a thicker walled silicone tubing you could find perhaps?

It was a great party. Carbonation was very good. Maybe not microbubbles, but it was just the way I wanted. Good head. Maybe not the best head retention, but the beer didn´t help either.
