Bottling quick question

Sun Jun 21, 2009 12:13 pm

I bottle my stout about a week ago. I'm assuming it's done being bottled conditioned now. Can I keep it in a dark cool area or do I need to move it to a fridge now?

(Will the beer go bad if it just stays at 70 degrees in the dark?)

The beer is not done. If you were to open it now I'd be willing to bet it would seem completely flat. Give it another 2 weeks at least.

And yes, try to keep your beers in a cool dark place. They don't have to be refrigerated, though it's probably ideal.

Be patient, it'll be worth it.

Definitely leave it at 70 for at least another week to be safe. You can leave it warm, but it would be best in cold storage. It will age out faster warm than cold.

I always carb my beer @ room temp. It'll carb much faster warm than chilled, in fact I've always heard that it isn't a good idea to carb it while cold unless you're force carbing.

And yeah, you should give it more time. I've had beer carb in as little as a week, it usually has some green flavors in it for at least another week. Usually it takes a good 2-4 weeks before it's ready to chill and drink, sometimes it takes a little longer.
