I'd recommend your flagship beer, another style that's fairly different from the flagship, and then maybe a specialty beer.

So, for instance, if your flagship beer is a Pale Ale, bring that, and also offer a dark lager, if you have one. That shows variety within the brewery's line. And a specialty beer, such as a Saison or a seasonal wheat, or something, just to show off your chops.

I always appreciate it when there are little freebies, like coasters or stickers, at the pro booths. Promotional material gets you noticed and remembered.

I also agree that it's good to have someone who is informed about the beers and the recipes on hand (helping to pour, yes, but able to engage in discussions without holding up the line).

Philly was my first NHC (and perhaps my only), but aside from the sheer size of the event, and the fact that you're going to have serious brewers and beer aficionados without the frat boy yobbos who just want to pound some brewskis, Pro Night and Club Night are no different than other beer expos I've attended.
The difference between a beer geek and a beer snob is simple: A beer geek cares about the beer he drinks. A beer snob cares about the beer you drink.

My suggestions: Professor(the double dry-hopped version), Ambrosia, and Old Siberian.
Something for everyone; and my favorites.

Posting an info sheet about each beer might help with most people's queries about what they're drinking, malt bill, hops, etc.
The best feedback that I can offer is to keep your both well away from Bell's, Jolly Pumpkin, Founder's, etc.
The little guy has a hard time getting noticed when everyone in the area is in line for some other brewery's beer.

Hopefully, the organizing committee will place them where their lines don't create a huge traffic jam.
Not so in Philly.

Of course, as the night progresses, everyone's beer tastes awesome!

Just bring Anna. Not only because she's cute; last time I was there I asked her a couple questions about the beer, she whips out a notebook with all the ingredients.

Don't put Dogfish Head directly across from Moonlight Mead. The two long lines intermixed and created a big ol road drunken roadblock down the row. More beer fountains though. Those are cool.
