I'd recommend your flagship beer, another style that's fairly different from the flagship, and then maybe a specialty beer.
So, for instance, if your flagship beer is a Pale Ale, bring that, and also offer a dark lager, if you have one. That shows variety within the brewery's line. And a specialty beer, such as a Saison or a seasonal wheat, or something, just to show off your chops.
I always appreciate it when there are little freebies, like coasters or stickers, at the pro booths. Promotional material gets you noticed and remembered.
I also agree that it's good to have someone who is informed about the beers and the recipes on hand (helping to pour, yes, but able to engage in discussions without holding up the line).
Philly was my first NHC (and perhaps my only), but aside from the sheer size of the event, and the fact that you're going to have serious brewers and beer aficionados without the frat boy yobbos who just want to pound some brewskis, Pro Night and Club Night are no different than other beer expos I've attended.
