Solera Brew

A few of us in our Brew Club are looking into starting a Solera Brew. We have two 52 gal Markers Mark bourbon barrels so we will probably do two different styles. I am looking for ideas, charts and time tables.

Solera barrels are best used for sour beers in my opinion. You dont want an unsour beer sitting in a barrel for five years unless its really strong over 12%. If i were you guys I would brew a BW or an RIS and get the bourbon character out of the barrel. Then you can start a lambic or flanders and start your solera.
