I have and American stout on beer gas (70:30 nitrogen:CO2) and would like to bottle a couple for competitions. Should I switch back to CO2, bottle with beer gas or say screw the competition and just drink it? :aaron

Bottling with beer gas doesn't serve any purpose. It's just allows you to dispense (and store) your beer at 30 PSI and not overcarbonate it. I assume you have some sort of beer gun or CPF or homemade picnic tap beer gun. Either switch to regular C02, or dial your beer gas down to "operating" pressure for your device, bottle and cap.
