Another carbonation question

Fri Nov 07, 2008 1:50 am

I kegged my first batch just over a month ago. After I hooked everything up, I made sure the regulator was set to 10psi, and let the beer sit for a few days. Every few days I would try it and see how it progressed. After about 10 days it seemed well carbonated... at first. I am still drinking this beer; it would be gone by now if I wasn't on pain medication and could drink regularly. The problem is this. When I pour the beer it comes out perfect and finishes with a nice head. The first drink seems fine and then after a 15-20 seconds the head is gone and the beer looks like a lot of the carbonation has left. Granted my glasses are washed in the dishwasher and the dishsoap has a drying agent that kills head but, my commercial beers poured into the glass don't react this way. So what is the deal?

Sounds like it could be your recipe. Try some CaraPils, CaraFoam, or a small percentage of wheat malt next time.

Is the beer completely flat when you taste it? If you still taste the carbonation it is just a head-retention issue (1/2-1 lb of wheat malt can help), otherwise it is a serving issue.
