Based off what you're saying, the beer inside the keg is fine, but it gets tainted as it travels through my messed up draft lines? If that is the case, I should be able to connect a new/separate dispensing line (eg. a picnic tap) and the beer should be fine, right?

Did you try the beer from a picnic tap?

You didn't mention if you were purging your kegs with CO2 prior to filling. You should do this if you're not already.

I tasted the beer through a picnic tap and it tasted basically the same.

I don't purge the kegs before filling. How is that most commonly done?

I just hook up my clean and sanitized keg to the gas and blast it with the pressure relief held open for 20 seconds or so, then close the pressure relief and let it fully pressurize. Then I de-pressurize to open the lid for filling. I know some brewers who completely fill a keg with sanitizer and then push it out under CO2 pressure to ensure a complete purge but I'm far too lazy for that.

After I sanitize the keg, I dump the sanitizer then fill the keg with CO2, pulling the relief valve at least three times to hopefully purge any O2. Then I rack the beer from my conical into the closed keg (with a hose from the "out" side running into a bucket of water), pushing it with CO2. Once the keg is full, I again hit it with the gas, pulling the relief valve multiple times to get O2 out and CO2 in.

Actually, what I meant to write was the hose runs into a bucket from the "in" post, not the "out".
