If you have the pressure set at 30 PSI, it's fairly easy to overcarbonate a beer, especially if you shake it. Yes, I believe you can bleed the pressure to relieve carbonation, but I'm not sure if your beer can oxidize that way. Something's gotta replace the empty keg space when you purge the CO2.

Just tasted the BVIP last night. Amazing beer. So complex and smooth for 8.3%. I agree with SWMBO who said it tastes like dessert. Thanks Denny!

No worries with your beer oxidizing from relieving the pressure valve on the keg. You are simply allowing CO2 in the headspace to escape. No oxygen will enter the closed system.

That's interesting, I had the same problem with an Oktoberfest recently. I had the keg on the gas for a few weeks with no carbonation whereas a keg of Janet's Brown that I hooked up to the same regulator ended up slightly over carbonated in a week and a half or so. I ended up having to shake the keg to get any CO2 into it. Very weird.

Rob: What is replacing the CO2? Doesn't opening the pressure valve make it not a closed system anymore?

ps. I split this beer with my dad, each of us taking a 3 gallon keg. He force carbed his with no problems in 24 hours w/o shaking. Very weird...
