Hmm, a month to condition makes sense, I guess. I'm just not good at being patient.
More specifically, my *cough pack of locusts* friends can drink an entire 5-gallon batch of mine in a single weekend. Even when it's undercarbed. I need to just overbrew for a while so stuff can properly condition.
I saw this pattern (well, kinda- I had 6 total judging sheets, 2 each from 3 beer submissions, and 2 judges mentioned it) that the judges assumed my beer was counter-pressure filled, since it was filled high and somewhat undercarbed. The undercarb thing for the beers was because I found out about the competition a bit late, and most of my beers are not packaged in competition-proper bottles (I tend to use 22oz bombers).
Anyway, I'll just be more patient. This scotch ale I'm drinking now, which I brewed back in January, is starting to taste really nice. Two months more and it'll be pretty dang fantastic. If there's any left.
