Depends on the style. Generally, for ales I rack from the fermenter into my bright tanks after two weeks. Lagers, about a month in the fermentor.

You leave your ales on the yeast for three months? Or are you using a conical, dumping the yeast and doing a unitank secondary fermentation?

yep. 7-10 days in primary. 2-3 months secondary... until its clear (gravity only). then keg. with minimal molestation of the sediment and steep bag on cane, by the time the keg is cold and carbonated im good to go.
