I think he just makes sure the beer and the bottles are really cold and fills then quickly and then "caps on foam" to keep O2 out.

The main thing is that he is filling bottles to be drank that same day or at least in the next few days. I would guess that even if the bottle sat for a month it would still have the same carbonation as it did the day it was bottled.

I may attempt this. I noticed my local Rock Bottom has a hose they use to fill growlers.

I believe that is the way Tasty bottles too. Hose right on the spigot and fill from the bottom.

Tasty does fill straight from a tap, but I believe he also purges the bottles with CO2. You can fill straight from a tap without purging, but I suppose you would start to get oxidation notes pretty quickly.

I've used a beer gun for over a year now with no problems. I filled 6 bottles each for my 5 NHC entries in about 15 minutes. Also, I recently tried a bottle that had been filled from the beer gun last October and didn't pick up any oxidation.

Not doubting you brotha but I'm curious how that happens if you're replacing air with liquid?

I have used a beer gun for several years now and am very pleased. My main problem was that the liquid and gas lines attached to the thing made it unweildy, and I sometimes found myself knocking one bottle over as I filled another. No, I am not very good at sports and other tasks requiring coordination and dexterity.

So, I built myself a beergun/bottle/cap holder. A tall piece of PVC filled with sanitizer holds the beer gun, a wide PVC endcap filled with sanitizer holds the bottle caps, and bottomless 3" sections of PVC pipe hold 12 oz and most 22 oz bottles while allowing overflow and foam to flow into a drain pan.
