What makes you think your 2nd batch is getting oxidized? Did you brew it in an open fermenter or something? The beer can easily sit in a plastic fermenter for several weeks to a month and you shouldn't experience any oxidation in the beer. As for bottling when the beer is only 1 wk. old, your beer will not condition very well and most likely will have off-flavors characteristic of that process (buttery diacetyl, acetaldehyde, yeastiness, etc.).

ya it was a open air....I moved it to a closed container and the wort is still krausening...
