How should I age my dark strong?

Wed Feb 25, 2009 6:41 pm

Hey -
I made a batch of JZ's dark strong, and it is finally finishing secondary (4 weeks later!)
I want to bottle half of it, and keg the other half in a 3 gallon little keg. Should I carbonate it first, then age it in the keg, or keep it flat, age it that way, then carbonate it after it has aged for a while (maybe 1 year)?

Thanks!
Please let me know if my response has offended you in some way.

I would purge all of the air out with C02 and force carbonate it, then let it sit in a corner by itself until it's darn good and ready for you. Having CO2 in there while it ages won't adversely affect it as much as not having it there and letting air contact it, enjoy!
