Jockey Box Usage/Balancing

I have an event coming up in Vegas where I am going to use a jockey box, for the first time. It is a loaner from my local club with two taps. I have not seen the inside yet, but I am assuming that there are at least 2 25' coils inside of unknown diameter. I will not be able to test the setup before the trip. The beer I am dispensing will be 2.5 volumes of CO2, and the beer will be at room temp all week.

Therefore, I assume that I will have to bump up the PSI to 27.6 in order to maintain the carbonation level at that temp. What length and diameter of stainless (or copper) coil will knock down that much pressure? Have any of you dispensed kegged beer stored at 68* through a jockey box? Will it get cooled down to serving temp, or am I expecting too much performance out of it? Should I bring some salt with me?

I guess that I could always store the beer between pouring sessions at 27.6 psi, and then just dial it back during serving...?

I have a single tap jockey box with a 50 foot stainless coil that I dispense at around 12 - 15 psi just fine.
