Update: I changed my freezer setting from the warmest to the coldest. Now it is set at 32, but it cycles between 35 and 37 degrees, and has not gone above or below that.

Another Update: I'm a happy, not-quite-fully-converted-kegerator-havin' guy!

I have an analog controller on my kegerator and get about 4 degrees swing between the high and low temp. If your probe is in the ambient air, even though you have a swing in temp, more than likely your beer will stay is a narrower band due to its thermal mass. I played with my setting until I got the desired serving temperature of the beer in the keg and left it there. For fermentation I use a digital controller taped to the side of my fermenter that has a 1 degree differential.

Didn't want to let this pass by without amplification. I keep all of my freezers and refrigerators as full as I can. Take up the most volume you can with beer, ice, jugs of ice or water or kegs filled with water or Star San. This thermal mass will keep the temperature swings to a minimum and help with cooling efficiency.
