Different taste, same batch

I finally started consuming my last batch...mmmmm. However, I have two dilemmas.

First has to do with carbonation. When I pour the beer (bottled), I get good head but not much of that residual carbonation that bubbles up from the bottom. Could it need more conditioning time? I bottled it three weeks ago.

Second dilemma is, the flavor of the beer is different in the one liter bottle that I opened, compared to the 1/2 liter bottle. The 1/2 liter bottle tasted pretty much like an IPA should, while the larger bottle tasted a little less hoppy and a little more malty. The only difference in the process was when I bottled, I bottled all of my one liter bottles first and then finished with the smaller, 1/2 liter bottles. The only thing I can think of, is that there was something in suspension that was hanging a little lower in the bucket when I was bottling, causing the first bottles to get more of something and the last ones to be bottled less of something. Maybe I messed up the DME solution or the way I added it???

I'm thinking I should just work my way through the rest of the bottles today, compare each one, and then compete for drunk of the week on the session tonight!
