Saison quick fermentation

After reading numerous accounts of Saisons being finicky in fermentation; getting stuck, taking forever, requiring extra temps, I am shocked at the short duration I've experienced. Brewed batch & pitched 11.5g pkt. Danstar Belle Saison rehydrated on 4/12 with 1.053 OG. It has been held at a constant 76/78º and after five days I have reached 1.004 SG and it's delicious and quite "Saisony". Apparently this yeast is a champ.

I repitched that yeast 3 times (the first 2 with variations of JZ'z BCS saison recipe and the last with a bastardised Simcoe Saison IPA). I had no issues with attenuation and fermented the last (heaps of yeast cells) at 68F. Haven't tried the last batch yet but the first 2 were nice.

Yes this strain is a very quick fermenter and easy to use. Much like WY 3711 strain with its ease of use.

This is my go to Saison strain at the moment, first time I used it, it took a 1.072 strong saison down to 1.005. I'll be KEGGING (my first non-bottled batch) a 1.083 strong black saison that I used Belle Saison with this afternoon. Haven't taken a final reading on it yet though.

Except I can't find my CO2 charger, so it's still in the carboy...

You're not going to try to carb it with those pellet gun cartridges are you? 2-3 batches & you'll have spent more money on cartridges than a tank & reg.
