I wanna try something new folks

Wed Sep 11, 2013 9:03 pm

I'm going to be brewing a stout this weekend, let's call it an American Stout shall we. I want to try a new yeast something I haven't used before.

What I have used on my stouts is White Labs Irish 004, Nottingham and White Labs California 001.

I'm thinking maybe White Labs English 002, but I'd love some suggestions folks. Whadaya think I should use on Sunday for my next Stout?

I highly recommend going with wlp002, just bear in mind that if you want the attenuation of something like wlp001 you will need to mash lower (148-150) or sub base malt for dextrose. I've never seen or had a yeast make beer taste so "finished" quicker than wlp002/wy1968.

+1 on the 002. Great stuff. 005 would be a good choice too though not as much attenuation. If you go 005, I recommend fermenting cooler and longer.

007 might work well if you're going high gravity.
