Conditioning question

I am fermenting a pale ale in a conical at 69f and the beer has been at 69f the whole time.
There has been no activity in the air lock for 4 days and the gravity readings are 1.010 for 4 days straight.
There is no acetaldehyde, diacetyl, or fusels in the beer.
Is there any reason not to crash cool it?
Now the part that will freak people out...lol The beer was brewed 7 days ago.

Sounds fine. Go ahead. What yeast did you use? What was your OG?

I had a mild that was done and ready at a week with 007. However, I didn't have time and it sat on the yeast another week before going in the keg. A smaller beer will be done real quick with that yeast, it just rocks through, cleans up and drops like a rock.

WLP 007 acts that quick. I have had similar results with other English strains too. The only problem is that you will need more beer a week earlier.

You can be drinking a beer 7 days from when you brew it if you do it right. Just pitch a quick yeast like wlp007, keep the OG low, and force carb in a keg by shaking at high pressure.
